Steps of Service

Lounge/ Patio

  • Greeter sits customer with menus

  • Server ‘Flags the Table'

    • Give the customer a carafe of water and water glasses (this lets us know that the server has greeted the table)

  • Sever takes ipad or paper pad to the table

    • Ask the customer if they are a member or if they have been here before

    • Take the order

    • Put order into the ipad and send to kitchen

    • Food will take longer so put it in first

  • Pour wine and take to customers

    • Describe and talk about the wine

  • If they ordered food bring silverware and shareable plates if needed

  • Add the flight to their pending order

  • Runner will bring food to tables

  • 2 Minutes 2 BitesAfter 2 minutes of the food coming out, check to see if everything is alright

  • Check up-Pull empty plates/ glasses

    • Do they want any desserts or extra wine

    • Talk about wine club/ events/ or promos going on

  • Check out & bring purchased bottles to table

  • When the customer is doneTable gets cleared of remaining plates and glasses

  • Table gets wiped down & chairs brushed off

Tasting Room Bar

  • Greet customer and ask if they would like a tasting or enjoy wine by the glass or bottle

  • Let them know they can stand at the bar or take their tasting &/or food to a table

  • Ask if they would like to order food

    • NO food in the tasting room! All food must be enjoyed outside or in lounge

  • While they are at the bar tasting, talk about the wine/ events/ promos

  • If they are taking their tasting and food to a table, check them out

  • If they are tasting at the bar check them out with they are done
