Beehive Cheese Co. | Big John’s Cajun Rubbed

This spicy hand-rubbed cheese packs a heated punch as you near the rind.  Made from milk from local Jersey cows in Northern Utah, the combination of sweet creaminess & spice make it a great pairing with our sparkling wine.
Paired with 2016 Albarino

Hartwell's "Mini Brie" made at Jasper Hill

This mini-brie style cheese is washed in cider from Eden Specialty Ciders.  The name means "sitting in cellar” which is exactly what this cheese does for 10 months to turn into the beautiful washed rind alpine cheese.
 2016 Verdelho

Marin French “Petite Breakfast Brie”
A Fresh unripen Brie made from the Marin creamy that’s been running since the late 1800’s. It’s a fresh expression of our sweet local milk and cream, tangy that captures the essence of cool coastal breezes that roll over the Petaluma creamery.
Paired with 2013 Coccineous

6 Month aged Manchego
Produced in the La Mancha region of Spain, made from both pasteurized and unpasteurized sheep's milk.  The rind is edible and has the distinctive traditional herringbone basket weave pressed on it. "Curado" aged 6 months acquires a caramel & nutty flavor with a distinct acidity.
Paired with 2014 Tempranillo

Cypress Grove “Midnight Moon“
Aged for 6 months, this blushing ivory colored cheese has a nutty and brown butter flavor up front with a phenomenal long lasting caramel finish. As this cheese ages, protein crystals form and lend a slight crunch to an otherwise dense and smooth finish that continues into a savory finish bringing out the fruit of this wine.  Truly a perfect pairing.
Paired with 2012 Reserve Cabernet Sauvignon

2015 Estate Chardonnay

Barrel fermented and aged sur lie for 9 months. Elegant aromas of green apple, lemon and peach.  Palate is complex, with rich flavors of pear, citrus and spice.

2016 Estate Rosé

Our 2016 Rosé wine exhibits delightful aromas of strawberry, watermelon, and spice. It is medium bodied with flavors of fresh raspberry, strawberry, and pomegranate.

This wine has spicy aromas and flavors of dried cherry, raspberry, bramble, mocha, earth, and leather.

Luscious aromas of blueberry, black cherry, spice and rose petal. The palate is full bodied and complex with flavors of blackberry, plum, black tea and chocolate.

Gold Medal | 2017 SF Chronicle Competition
Obscurus, meaning dark and unknown, exhibits aromas of plum, black cherry, cedar, and spice. The palate is soft and rich, with luscious flavors of blackberry, cherry, mocha and coffee.
